Looking for said parts to upgrade my daily beater to 5-lug status... thereby clearing out my excess winter wheels/rubber that are stacking up in the basement.

You know all you need is the hubs. And these hubs are almost 20 years old, last build in 1996, and finding some in Europe that aren't rusty, will be tough.
You also need to specify which struts you want. The 3B S2 came with 12mm bolts, and the front struts were 50mm. The ABY S2 came with 14mm bolts, and the front struts were 55mm, or the same as the rear. If you insist on the later struts, you can get the rears from any post 1992 coupe. The front 55mm ones are ABY specific.

Good point about the metal cancer...

Also considering UrS/V8 front hubs and b5a4 rears.

The UFO hub found on the V8s & early 200s is within 1mm of an S2 front hub. Both hub carriers use the same 82mm bearing for the front. Just need to turn down the outer diameter to fit non UFO brake rotors.

Then you can use RS2 caliper brackets with Porsche calipers & A8 323mm front rotors for a Big Brake upgrade.
For the rear you can use the rear A4 hub with the A4 rotor to keep the correct offset on the brake caliper.
